Title: Roasted Oven Tomato Sauce

Preheat oven to 325 degrees F.
Halve the tomatoes. Seed if desired. Place in glass baking pans, cut side up. Sprinkle with oil. Dice the onion and garlic, and harvest and finely chop the thyme and oregano. Sprinkle the tomatoes with everything.
Bake uncovered for 2 hours, but check after 1 hour. If the tomatoes seem to be cooking too quickly, turn down the heat.
Then, increase the temperature to 400 degrees F and bake another 30 minutes.
This is our go-to summer tomato glut recipe. Amounts are approximations when doing big batches. Just stir everything together when it's done.
